  • 1 tsp olive oil
  • 2 lbs red potatoes (washed and quartered)
  • Kosher salt
  • 6 tbsp butter
  • 3/4 cup half and half
  • Fresh ground pepper

Instructions

  1. Preheat your oven to 375°F. Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for about an hour until soft.
  2. In a large pot, cover the quartered red potatoes with cold water and add salt. Bring to a boil and simmer for about 15 minutes until fork-tender.
  3. Drain the potatoes and return them to the pot. Squeeze the roasted garlic cloves directly into the pot.
  4. Warm the half and half and butter until melted, then pour over the potatoes. Season with salt and fresh pepper, then mash until creamy but slightly chunky.
  5. Serve warm, garnished with herbs or an extra pat of butter if desired.
