  • 1 whole chicken (about 45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh rosemary
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth

Instructions

  1. Prepare the marinade by combining olive oil, garlic, thyme, rosemary, orange zest, honey, soy sauce, Dijon mustard, salt, and pepper in a bowl.
  2. Marinate the chicken by placing it in a zip-top bag or shallow dish and pouring the marinade over it. Seal tightly and refrigerate for at least one hour or overnight.
  3. Preheat your oven to 375°F (190°C).
  4. Arrange the marinated chicken breast-side up in a roasting pan with quartered onions around it. Pour in the chicken broth.
  5. Roast for approximately 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C), basting halfway through.
  6. Let the chicken rest for 10-15 minutes before carving.
