  • 1 head garlic

  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse cherry tomatoes and pat dry; place in a bowl. Slice the top off the garlic head.
  3. Drizzle tomatoes and garlic with olive oil; season with salt, pepper, and red pepper flakes.
  4. Spread on a baking sheet and roast for 25-30 minutes until blistered.
  5. Cook pasta according to package instructions; reserve 1 cup of cooking water before draining.
  6. Squeeze roasted garlic into a bowl; add roasted tomatoes and juices, mashing together for sauce.
  7. Mix in remaining olive oil and balsamic vinegar (if using); combine with cooked pasta, adding reserved water for desired consistency.
  8. Fold in chopped basil before serving; garnish with Parmesan cheese and extra basil.
