  • 1 pound turkey sausage (mild or hot)
  • 5 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 21/4 cups mirepoix (or 3/4 cup each: diced carrots, celery, and yellow onion)
  • 4 cups chopped baby gold potatoes
  • 4 cups chicken stock
  • 6 tablespoons flour
  • 3 cups milk (1%, 2%, or whole)
  • 2 cups freshly shredded extra-sharp Cheddar cheese

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Add turkey sausage and brown for about 5 minutes, breaking it into crumbles. Transfer to a plate.
  2. In the same pot, melt butter and sauté mirepoix for 5–7 minutes until soft.
  3. Stir in chopped potatoes, dried basil, parsley, salt, and pepper. Pour in chicken stock; bring to boil then simmer covered for 15–20 minutes until potatoes are tender.
  4. Meanwhile, in another pot, melt remaining butter and whisk in flour until smooth. Gradually add milk while whisking until thickened. Stir in heavy cream.
  5. Combine the creamy mixture with the soup pot; add shredded cheese gradually while stirring until melted.
  6. Serve warm with hearty bread on the side if desired.
