  • 1 tablespoon granulated sugar
  • 2 and 1/2 teaspoons baking powder
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons chopped fresh chives
  • 1 cup shredded cheddar cheese
  • 1/2 cup unsalted butter, frozen
  • 2/3 cup cold buttermilk
  • 1 large egg, separated
  • 3/4 cup finely chopped cooked chicken
  • Optional for topping: flaky sea salt

Instructions

  1. Preheat your oven to 400°F (204°C). In a large bowl, whisk together flour, sugar, baking powder, garlic powder, salt, and pepper. Stir in chives and cheese.
  2. Grate the frozen butter into the flour mixture until it resembles pea-sized crumbs.
  3. In another bowl, whisk together buttermilk and egg yolk; pour over dry ingredients along with chicken. Mix gently until combined into a sticky dough.
  4. Turn the dough onto a floured surface; knead lightly into an 8-inch disc and cut into wedges.
  5. Brush the tops with the reserved egg white mixed with buttermilk, sprinkle with sea salt if desired.
  6. Chill in the fridge for at least 15 minutes before baking on a lined sheet for about 22-25 minutes until golden brown.
