  • 1 white onion, finely chopped
  • 16 ounces shredded cheddar cheese (divided)
  • 1 cup thawed corn kernels
  • 1 jalapeño, finely chopped
  • 2 large eggs
  • 1 box (8.5 ounces) corn muffin mix
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate zucchini and thoroughly drain to remove excess moisture.
  3. In a large bowl, combine drained zucchini, chopped onion, half of the shredded cheese, corn kernels, jalapeño, eggs, garlic powder, cumin, salt, pepper, and corn muffin mix.
  4. Pour the mixture into a greased baking dish and top with remaining cheese.
  5. Bake for about 50 minutes or until golden brown and set in the center.
