  • 450g flank or sirloin steak
  • 1½ cups whole milk
  • 2 cups shredded cheddar cheese
  • 1 cup long-grain white rice
  • 2 tbsp butter
  • Salt and pepper, to taste
  • 1 tsp paprika
  • 2 tsp ground cumin
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 2 garlic cloves, finely chopped
  • 1 cup shredded Monterey Jack cheese
  • 2 cups broth or water
  • Fresh cilantro, chopped
  • Lime wedges
  • Avocado slices
  • Sliced jalapeños

Instructions

  1. Season the steak with olive oil, paprika, cumin, garlic powder, salt, and pepper. Sear in a hot skillet for 4-5 minutes on each side until cooked to your liking. Let rest for 5-10 minutes before slicing.
  2. Rinse rice under cold water. In a pot, heat olive oil and toast the rice with garlic powder for added flavor. Add broth or water, then bring to a boil and simmer for 18-20 minutes.
  3. In the same skillet used for the steak, melt butter and sauté garlic until fragrant. Pour in milk and bring to a gentle simmer. Gradually add cheddar and Monterey Jack cheeses until melted and smooth.
  4. To serve, layer rice on plates, top with sliced steak, pour queso sauce on top, and garnish with cilantro, lime wedges, avocado slices, and jalapeños.
