  • 2 1/4 teaspoons (7g) active dry yeast
  • 1/4 cup (50g) granulated sugar
  • 1/4 cup (60g) unsalted butter, softened
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 8 oz (225g) cream cheese, softened
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 1/2 cup (120ml) sour cream or Greek yogurt
  • 1/2 cup (100g) packed brown sugar
  • 2 tablespoons ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup (60g) unsalted butter, softened
  • 1 cup (150g) fresh strawberries, hulled and sliced
  • 1 tablespoon sugar (optional, for extra sweetness)
  • 4 oz (115g) cream cheese, softened
  • 1/2 cup (60g) powdered sugar
  • 1/4 teaspoon vanilla extract
  • 12 tablespoons whole milk, as needed for consistency
  • Pinch of salt

Instructions

  1. Activate the yeast by combining lukewarm milk and active dry yeast in a bowl; let it froth for 5-10 minutes.
  2. In a large bowl, mix flour, sugar, and salt. Add the yeast mixture, softened butter, egg, and vanilla extract to form a dough.
  3. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
  4. Let the dough rise in a greased bowl until doubled in size (1-1.5 hours).
  5. Prepare the cheesecake filling by beating softened cream cheese with sugar, vanilla extract, flour, and sour cream until smooth.
  6. Mix brown sugar, cinnamon, and salt in another bowl for the filling.
  7. Roll out the risen dough into a rectangle, spread softened butter evenly, layer with cheesecake filling and sprinkle with cinnamon-sugar mixture.
  8. Roll tightly into a log shape and cut into 12 equal rolls; place in a greased baking dish.
  9. Allow rolls to rise again until puffy (30-45 minutes), then bake at 350°F (175°C) for 25-30 minutes until golden brown.
  10. Cool slightly before drizzling with cream cheese icing made from softened cream cheese, powdered sugar, vanilla extract, milk, and salt.
  11. Top with sliced fresh strawberries before serving.
