  • 1 3/4 cups apple juice
  • 2 Tablespoons apple cider vinegar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla bean paste (or vanilla extract)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/8 teaspoon salt

Instructions

  1. Core and chop the apples into large chunks. Combine them with the apple juice and cider vinegar in a large pot. Bring to a boil, then reduce heat and simmer covered for about 30 minutes until apples soften.
  2. Add brown sugar, vanilla bean paste, cinnamon, nutmeg, cloves, and salt to the softened apples. Stir well.
  3. Blend the mixture until smooth using an immersion blender or by transferring it to a standing blender.
  4. Return the blended apple mixture to the pot and cook uncovered over medium heat for an additional 30-45 minutes to thicken, stirring occasionally.
  5. Serve warm or cool completely before storing in jars.
