  • 1 medium onion, diced
  • 23 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 (15 oz) can black beans, drained
  • 1 (15 oz) can corn kernels, drained
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (10.5 oz) can condensed cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded Mexican cheese blend
  • 1 large bag (9.25 oz) Nacho Cheese Doritos, crushed

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a skillet over medium heat, brown the ground beef with diced onion and minced garlic until cooked through. Drain excess fat.
  3. Stir in taco seasoning, black beans, corn, and diced tomatoes; simmer for 2-3 minutes.
  4. In a bowl, mix cream of mushroom soup and sour cream until smooth.
  5. In the greased baking dish, layer half of the meat mixture, half of the creamy mixture, one cup of shredded cheese, and half of the crushed Doritos. Repeat layers finishing with remaining cheese on top.
  6. Cover with foil and bake for 15 minutes; remove foil and bake for an additional 10 minutes until bubbly and golden.
  7. Let rest for 5-10 minutes before serving.
